Fried Tofu

I was a hero last night after making this dinner. DC used to love fried fish and he said the fried tofu had the same texture and the same coating flavor as fried fish and he was ecstatic. (Next time I'm going to add a bit of seaweed powder to the tofu marinade to give it a fishy flavor and really make him happy!) Anyway, the tofu is pressed and then marinated so it soaks up all the yummy flavors, like garlic, vinegar and lemon juice. With every bit of the hot and crunchy tofu a burst of flavor explodes in your mouth. For side dishes I served roasted asparagus (the recipe is on my blog) and roasted garlic couscous (from a box mix).

Ingredients:
1 block of hard tofu (slice into 3/4 inch fillets and press between paper towels for a few minutes to drain any excess moisture)

marinade:
2 cloves garlic diced fine
1 tsp pepper
1 tsp cumin
1 tsp dill
1/2 Cup white vinegar
1/2 Cup extra virgin olive oil
1 Tbsp lemon juice
1 Tbsp capers
1/2 Cup balsamic vinegar

Dredging Mixture:
1/3 Cup flour
1/3 Cup corn meal
1 tsp salt
1 tsp pepper
1 tsp cumin

*Combine all the marinade ingredients together in a large dish
*After slicing and pressing the tofu place all of the pieces in the marinade for at least 1 hour but not more than 4 hours
*Combine the flour and the corn meal with the salt and pepper and cumin
*Remove tofu from marinade and dredge in dredging mixture, coating evenly and firmly
*Fry in a few inches of vegetable oil until crispy and golden on all sides
*Enjoy!
