Chickpea and Broccoli Casserole!

So satisfying! It is packed full with so much healthful deliciousness, plus it is so savory and warming. Perfect comfort food.

Ingredients:
3 cans of chickpeas, drained and rinsed
1 large onion, chopped small
3 large carrots, chopped small
1 head of broccoli, chopped small
3 tablespoons thinly sliced chives
2 cloves of finely diced garlic
3 slices of whole grain bread, toasted and chopped small
3 tablespoons olive oil
1 cup vegetable broth
1 tsp salt
1tsp pepper
1 tsp cumin

*Preheat oven to 350 degrees.
*Mash up the chickpeas very well, for at least two minutes, making sure they are all mushed and mashed up to a nearly smooth consistency.
*Add the veggies and mix well.
*Add the bread crumbs and mix well.
*Add the oil and mix well.
*Finally, add the broth, spices and mix one last time.
*Press the mixture firmly into the casserole dish.
*Cover with foil, bake for 45 minutes. Uncover and bake for 15 more minutes.
*Garnish with more chopped chive
